Kale and Spinach Cranberry Salad

Yum yum, today in my lunch i have packed a delicious kale (as you know, my favorite!) and spinach salad! It will be delicious and so healthy and filled with nutrients! I am looking forward to eating this lunch!!! Try it and you will feel amazing I promise!!!!


Ingredients:

Kale
Baby Spinach
Dried Cranberries
Sliced Almonds
1 tbsp Hemp hearts

Optional:

Feta cheese!

(I was going to add feta but once again the feta I bought from the grocery store is rotten... I am getting tired of this! I just want some feta already!)

Dressing:

I have not yet mastered making my own dressing, so i am currently using Kraft Raspberry Vinaigrette!

Green Ginger Apple Smoothie

This smoothie is great for losing excess weight and getting clearer skin! It will make you feel great and you wont be as hungry later on if you drink this baby up! I have to admit, these smoothies are not super delish and mouth watering, but trust me, you will feel so good afterwards, you will crave them! I feel way more energized since i started including very healthy fruit and veggies in my diet! So give it a try and let me know if you like it by commenting!

Healthy Pina Colada Smoothie Attempt One

I was craving pina colada and so i decided to try and make a healthy smoothie version of it. I liked it but i felt it was missing something and i haven't figured out what yet! So if anyone has any ideas, please let me know!!!!


Into my Bullet went:

Fresh pineapple
shaved unsweetened coconut
coconut water
ice
frozen mango
1 tbsp hemp hearts


Blend it all together and drink up!


Thoughts:

The coconut didnt blend up well so i wasnt crazy about the chewy texture!

Brown Rice Sushi

Found this recipe I really want to try! I love sushi, so making an even healthy sushi makes me very happy! I found this recipe on epicurious.com.

Ingredients:
  • Scant 2/3 cup short-grain brown rice*
  • 1 cup plus 1 teaspoon water
  • 2 teaspoons soy sauce
  • 2 tablespoons seasoned rice vinegar**
  • 1 teaspoon wasabi powder**
  • 2 (8 1/4- by 7 1/4-inch) sheets roasted nori** (dried laver)
  • 1/2 Kirby cucumber, peeled, seeded, and cut into 1/16-inch-thick matchsticks
  • 1/2 carrot, cut into 1/16-inch-thick matchsticks
  • 1/2 firm-ripe small California avocado
  • 3/4 oz radish sprouts*, roots trimmed
Rinse rice well and bring to a boil with 1 cup water and 1 teaspoon soy sauce in a 1- to 1 1/2-quart heavy saucepan, then reduce heat to very low and simmer, tightly covered, until water is absorbed, about 40 minutes. Remove from heat and let rice stand, covered, 10 minutes.
While rice is standing, stir together vinegar and remaining teaspoon soy sauce.
Transfer rice to a wide nonmetal bowl (preferably wood, ceramic, or glass) and sprinkle with vinegar mixture, tossing gently with a large spoon to combine. Cool rice, tossing occasionally, about 15 minutes.
Stir together wasabi and remaining teaspoon water to form a stiff paste. Let stand at least 15 minutes (to allow flavors to develop).
Place sushi mat on a work surface with slats running crosswise. Arrange 1 sheet nori, shiny side down, on mat, lining up a long edge of sheet with edge of mat nearest you. Using damp fingers, gently press half of rice (about 3/4 cup) onto nori in 1 layer, leaving a 1 3/4-inch border on side farthest from you.
Arrange half of cucumber in an even strip horizontally across rice, starting 1 inch from side nearest you. (You may need to cut pieces to fit from side to side.) Arrange half of carrot just above cucumber in same manner. Peel avocado half and cut lengthwise into thin slices, then arrange half of slices just above carrot in same manner. Repeat with radish sprouts, letting some sprout tops extend beyond edge.
Beginning with edge nearest you, lift mat up with your thumbs, holding filling in place with your fingers, and fold mat over filling so that upper and lower edges of rice meet, then squeeze gently but firmly along length of roll, tugging edge of mat farthest from you to tighten. (Nori border will still be flat on mat.) Open mat and roll log forward to seal with nori border. (Moisture from rice will seal roll.) Transfer roll, seam side down, to a cutting board. Make second log in same manner, then cut each log crosswise into 6 pieces with a wet thin-bladed knife. Serve with wasabi paste, soy sauce, and ginger. 


I will definetely be trying this!!!!!

To give you an update on my healthy living progress, this weekend didn't go so well, i had no time to exercise and i had events to go to that served not the healthiest food choices, so i am trying to get back on track but its a struggle because i am craving pizza like mad! Healthy No Bake Chocolate Peanut Butter Cookies

If you need a chocolate fix, this is sure to satisfy! They are extremely easy to make and very yummy! Also they are so chocolatey, one satisfied my sweet tooth for the whole day! I made a batch and put them in a freezer bag in my fridge, and they will last the week at least! Also I'm sure you could freeze them, though I haven't tried yet! I brought one to work and it was the perfect snack!



Ingredients:

1 or 2 ripe bananas (the riper the better)
1 cup of peanut butter or almond butter (almond butter is healthiest)
1/3 cup honey
1/4 cup cocoa powder
1/4 cup almond, coconut or soy milk
pinch of sea salt
1 tbsp pure vanilla extract
3 cups instant oats (or regular rolled oats)

Mash the banana and put it into a pot. Put all the rest of the ingredients except for the oats into the pot and bring them to a boil. Take the pot off the heat and let it cool for one minute. Add the oats and stir until well combined. Make them into medium sized drops and place them on wax paper to cool.

Enjoy them! They are so good!

Creamy Green Smoothie With Avocado

My new FAVORITE healthy smoothie! I tried it last night and it was so creamy!

1 fresh or frozen banana
A small handful of kale
A small handful of fresh or frozen strawberries
Half of an avocado
1 tbsp hemp hearts
Water

Throw it all into your bullet and blend it up! I like mine to have quite a bit of water in it so its a touch runnier and I can drink it with a straw!

It is truly delicious!

Eggs For Dinner

Good evening! Tonight I made some very very yummy food! I made the recipe up in my head and it paid off! Of course the recipe includes my current favorite veggie! KALE! Which as I have said before is super healthy!!!!


Ingredients:

Kale
1 Pepper (I went with orange)
2 eggs (just the whites for a super healthy dinner!)
Salsa (I used my moms awesome homemade salsa)
Jalapeno Havarti


Directions:

Steam the kale and add a splash of lemon and a pinch of pepper. Roast the red peppers with a touch of olive oil. When the kale is done place it onto the plate and put the peppers on top. Fry the eggs in the pan you cooked the peppers in. When they are done put them on top of the peppers and kale. Lay a small amount of Havarti on top of the eggs to melt. Warm the salsa in the pan and put on top of the whole thing! Eat up!!!!!!! Yummy and pretty healthy! (The only thing that might be kind of unhealthy is the cheese!) I had a cup of chocolate soy milk with it and also YUM!

What You Are Really Eating

I have worked at McDonalds, Subway, and Quiznos and I have friends who have worked at Starbucks and Tim Hortons and there are some things about these places you might not know about! I thought I would tell you some of the ones I can think of now and maybe more later as I think of them!



McDonald's

The pancakes are frozen and then warmed, not made from scratch
The fryer oil is actually lard
They put a ridiculous amount of gross drippy butter (which is not even actually butter) on your egg mcmuffin ... Try it without butter for a healthy alternative!
There are a million things wrong with McDonald's... I just avoid it all together!

Tim Hortons

The stuff at the bottom of the hot chocolate is salt. They salt it to give it more flavour, but it is so unhealthy! Grab a chocolate milk instead.

While we are on the topic of chocolate milk, when buying chocolate milk make sure it doesn't say beverage underneath. Read the ingredients. Home companies like Beatrice have real chocolate milk and fake chocolate milk that looks exactly like the real milk carton only it says beverage. It's cheaper for them to make and also is very unhealthy!

Stay away from nestlea products, they are a horrible company! From treating their employees badly to torturing animals, to using poor quality ingredients! And they don't even taste that good!

Places that use frozen eggs for their breakfast sandwiches instead of fresh:

Tim Hortons
Starbucks
Subway

these are filled with preservatives!

Did you know that if you are craving a Starbucks but can't find one, Subway has the same exact coffee!

Quiznos:

The bread is frozen and they just thaw it!

Healthy Lunch Ideas: French Toast

What do you bring in your lunch to work?

Today I brought an apple, a banana, a mango, some cucumbers, some baby carrots, some multigrain crackers, and some granola and dried cranberries!

Have you ever thought about bringing French toast with you to work? It's one of my FAVORITE work lunch ideas! I cook it before work with enough time to let it cool down, then I cut it into strips for dipping and put syrup in a small Tupperware on the side! When you get to work put it into the microwave for about a minute and eat up! DELISH!

Something to think about:

Using almond milk instead of milk
Instead of syrup, put some Nutella into a small Tupperware and slice up a banana when you get to work (so it doesn't go brown) to have chocolate banana French toast!

Romaine Lettuce is The New Hamburger Bun

For a healthy alternative to a hamburger bun, take two nice big pieces of romaine lettuce and make a delicious homemade burger for inside! I added some jalapeƱo havarti and tomatoes !



Healthy and Disgusting Green Smoothie

This green smoothie is unbelievably healthy for you and also great if you are hoping to lose wait or wanting clearer skin. It contains kale (my obsession at the moment) which is so good for you in a million ways! I chose to make this smoothie after I found it on the website "Young and Raw," but i didn't expect it to be as gross as it turned out to be! I drank it though and felt great afterwards! Now i have come up with some additions that help with flavour but still keep it nice and healthy!


It doesn't look very appetizing does it?

Original Ingredients:

Kale
Cucumber
Granny Smith Apple
Ginger
Fresh Parsley
Water

Ingredients to make it taste better:

Frozen Strawberries (small handful)
Lime Juice (Freshly squeezed)
Frozen Mango
Fresh Banana (one)

Additions to add even more health:

Hemp Hearts (1 tbsp)
Chia Seeds (1tsp)

 Throw all the ingredients in the blender (or bullet?) and smoothie it up! (I didn't include how much of everything because i change it every time, sometimes more kale, sometimes more cucumber, etc... I have been making a healthy green smoothie everyday for myself and my boyfriend and we are feeling very good! I tried to make it for breakfast but its still cold out and I cant bring myself to drink a smoothie when im already freezing!

Super Cranberry Salad

This super salad is super easy, super healthy, super delicious and made with a super food! Kale is a form of cabbage, but if you are like me and aren't crazy about cabbage, don't worry, I don't think it tastes like cabbage at all. Also it doesn't have the nasty side effects of cabbage (gas!) so that is a definite plus! Kale is known as a super food because it is one of the healthiest veggies you can eat! (I am literally obsessed with it right now! I'm putting it in everything! Even smoothies!) Kale is high in iron (which is something i am deficient in) and is full of antioxidants, among other things... It has even been known to help prevent some types of cancer! Very interesting stuff! I strongly suggest researching more into this super food! My boyfriend and I had this salad for dinner on Friday night and my was it good!




Super Salad Recipe

Ingredients:

Kale
1 Royal Gala Apple
Dried Cranberries (Preferably no sugar added)
Either Almonds or Pecans

Optional:

Feta Cheese (Makes it less healthy)
Hemp Hearts

Dressing:

Make your own! or if you new to this like me, use Kraft Raspberry Vinaigrette Dressing.


It is very good! But keep in mind, Kale is not lettuce and it does taste different! It will make you feel great!

Hello,

I'm Smartypants, the blogger of The Healthy Grail. Nice to meet you all and I hope you enjoy this blog! I will be posting tons of healthy recipes, some I have tried and others I haven't, but all will be fabulous!

I have made a decision in my life. A decision to be healthy, to be active and to be happy. I have been slacking for the last couple of years, I must admit, but I feel very committed now.
